I've been a fan of using red lentils to make a healthier and much easier (hello no constant stirring!) spin on risotto for a few years now.
For years I used to think that a curry had to have more than just curry powder added to make it taste delicious. But then I realised the whole point of curry powder is that someone else has done the blending for you. All the complexity you need is in that little jar or tin.
I'm so glad I came up with the idea of using red lentils instead of rice in a risotto inspired dish. It's my go-to pantry meal these days. Not only is it just as comforting and lovely as risotto, it's also healthier because the lentils have more protein and fibre than rice. It's also much less work because the lentils naturally go all oozy with cooking and don't need the constant stirring. Win win win!
When it comes to a super satisfying, healthy weeknight dinner, this simple frittata is as easy as it gets. Just mix three ingredients together. Pop them in the oven. Set the timer and dinner is done. Greens protein and cheese all in the one tasty package.
Growing up, tuna pasta bake was my favourite favourite thing to eat. This comforting bake using tuna, spinach and onions is just as warming and delicious, without the pesky carbs. It also happens to be much quicker and easier to make. Win!

Now I know spinach soup doesn't sound that exciting. Even with the alliteration. But trust me, when you top it with creamy salty feta and crunchy roast nuts, this soup becomes a thing of beauty (and deliciousness!)
