While I love delicate, silken tofu in my miso soup, firm tofu is my preferred option for cooking with. I find the best firm tofu is the one that feels the firmest in the packet, so go ahead and have a little squeeze in the supermarket.

Like a lot of toddlers, Fergal has a healthy distrust of anything green. Fortunately he's a fan of peas so I've been keeping a stash in the freezer.
We normally don't eat a lot of pasta but I must admit, I love having this simple stir-through dish in my repertoire as a treat for Fergal or when I have a hoard of hungry toddlers to feed.

Along with Fergal's Fried Rice, this is one of my backup quick dinners for my boys. I usually have cooked pasta in the freezer so all I have to do is remember to defrost the pasta a few hours before dinner. This has the added bonus of reducing the impact of the pasta on our blood sugar because the cooking and cooling process creates 'resistant starch' which our bodies use as fiber - something especially great for gut health.
I know anything with sun-dried tomatoes sounds so 1990s. But after a dismal tomato season and missing out on lots of home grown oven roasted tomatoes, I was compelled to pick up a jar of sun dried tomatoes in the supermarket.
Now that I've finally got over my childhood aversion to peas (after many false starts!), there have been a lot of pea-based abundance bowls in our house.
I just love love love the combo of goats cheese and olives. It's tangy, It's salty, It's briny. It's a flavour explosion.
