'Stir-Through' Mac & Cheese

I've been a fan of using red lentils to make a healthier and much easier (hello no constant stirring!) spin on risotto for a few years now.

Like a lot of toddlers, Fergal has a healthy distrust of anything green. Fortunately he's a fan of peas so I've been keeping a stash in the freezer.
Along with Fergal's Fried Rice, this is one of my backup quick dinners for my boys. I usually have cooked pasta in the freezer so all I have to do is remember to defrost the pasta a few hours before dinner. This has the added bonus of reducing the impact of the pasta on our blood sugar because the cooking and cooling process creates 'resistant starch' which our bodies use as fiber - something especially great for gut health.
I love the original Shakshuka - a Tunisian baked egg dish with red peppers, tomato and fiery harissa. This green version was inspired by one of my favourite cafes and it's just as delicious in a more calming way.
For years I used to think that a curry had to have more than just curry powder added to make it taste delicious. But then I realised the whole point of curry powder is that someone else has done the blending for you. All the complexity you need is in that little jar or tin.
Now that I've finally got over my childhood aversion to peas (after many false starts!), there have been a lot of pea-based abundance bowls in our house.
While I love delicate, silken tofu in my miso soup, firm tofu is my preferred option for cooking with. I find the best firm tofu is the one that feels the firmest in the packet, so go ahead and have a little squeeze in the supermarket.

I was never a huge fan of sauerkraut until I started making my own. Being able to control how fermented or ‘funky’ your kraut gets makes a huge difference. If you’re new to fermenting vegetables though I’d really recommend starting with fermented carrots which are much much easier!
Now I know spinach soup doesn't sound that exciting. Even with the alliteration. But trust me, when you top it with creamy salty feta and crunchy roast nuts, this soup becomes a thing of beauty (and deliciousness!)
I know anything with sun-dried tomatoes sounds so 1990s. But after a dismal tomato season and missing out on lots of home grown oven roasted tomatoes, I was compelled to pick up a jar of sun dried tomatoes in the supermarket.
I'm so glad I came up with the idea of using red lentils instead of rice in a risotto inspired dish. It's my go-to pantry meal these days. Not only is it just as comforting and lovely as risotto, it's also healthier because the lentils have more protein and fibre than rice. It's also much less work because the lentils naturally go all oozy with cooking and don't need the constant stirring. Win win win!
One of the best things about discovering my Broccoli Sandwich Bread was being able to start having 'things on toast' again without worrying about carbs or gluten. And knowing I was actually getting an extra serve of veggies. Win!
The best part is that this simple soup is made with ingredients that keep in your pantry for months (if not years) so it’s a great little recipe to have in your ’emergency meal’ arsenal.
