My Irishman went through a Japanese phase for his Sunday night cooking experiments a few months ago. Which meant an influx of Japanese cookbooks and ingredients into the house. Not that I’m complaining…
This is one of those fab little one pot meals that is equally welcome on an ordinary Wednesday night as it is for Sunday bunch.
I don’t know about you but I tend to think of meatballs as a wintery type dish. But they can be given a summery makeover. All it takes is a super fresh lemony sauce and serving on a bed of baby spinach instead of the more usual, hearty meatball accompaniments.

It’s funny how ideas come and go. Years ago I created a Zucchini Burger recipe and was super excited about veggie burgers that actually contained vegetables. At the time I was keen to try a broccoli burger.

This is a great little salad combo. I just love the contrast between the hot crispy beef and the smooth creamy ricotta. So good.
