This idea actually came from one of my Joyful Cooking students.
I was surprised I felt a little grief when I made this ‘pie’ for my latest photo shoot.
We have the lovely Nigella to thank for inspiring this recipe. I can’t believe I hadn’t ever thought to make a curry using eggs. It’s such a brilliant idea.
It’s funny how ideas come and go. Years ago I created a Zucchini Burger recipe and was super excited about veggie burgers that actually contained vegetables. At the time I was keen to try a broccoli burger.
As much as I love eating my Zucchini Pizza and Cauliflower Pizza, they can be a little high effort given you need to grate the veg.
How can you not love zucchini? Especially when you have the combo of Zucchini Basil & Feta in this incredibly delicious soup.
As much as I love Cauliflower Pizza, there was one big problem with it.

OMG! This is one of my favourite favourite things to eat at the moment. It’s such as simple dinner but so satisfying and delicious. And one of those versatile recipes that is equally good for breakfast, lunch OR dinner.
Balsamic vinegar is such as magical ingredient. Especially with these sausages and cabbage.

So I got the idea to turn a baked frittata into a pie from someone on Instagram.
I can’t tell you how much I adore cabbage these days. It’s seriously one of my favourite things to eat.
The first time I made this I just piled everything into a baking dish. Popped it in the oven and set the timer so dinner cooked itself while the boys and I went for a walk to the dam.

The idea to combine these three powerful flavours came from a lunch I had at Highroad – a fave local cafe. They served it in the form of poached eggs with pesto, broccolini and dried olive crumbs.
Back when I used to eat potato chips on a regular basis, ‘cheese and onion’ was one of my favourite flavour combos. This recipe is a little healthier celebration of that classic junk food ‘marriage’.
