Cashew Yoghurt
When I had my vegan week recently, I played around with both coconut and cashew ‘yoghurts’. And while the coconut yoghurt was good, I much preferred the flavour of this cashew number.

These burger buns are the real deal. They’re now my go-to whenever I’m in the mood for a low carb sandwich or, of course, a burger! Don’t be tempted to try them without the psyllium – it’s really the critical ingredient for getting the light soft, burger bun texture (it also adds lots of fiber!)
One of the things I miss most about being gluten-free is good quality sourdough bread slathered with creamy Irish butter. I do treat myself occasionally but since creating this almond ‘sourdough’, I find it hits the spot almost as much as the real thing. Even my Irishman is a fan. Of course this isn’t a real sourdough, because there isn’t any fermentation, we’re just using vinegar to get that refreshing tangy flavour.
It's not often that I bother to cook up a big pot of beans. But every time I do, I'm glad I went to the extra effort. Home cooked beans always have a much nicer flavour and texture than canned beans.
Working with yeast and making your own pizza dough seems much scarier than it actually is. Just give it a go and you might surprise yourself.

When I'm in the mood for a sandwich or a slice of toast, this is my go-to recipe, inspired by David and Luise at Green Kitchen Stories. I love how something that feels and tastes quite 'bready' is actually a serve of vegetables.
For years my favourite chilli oil recipe involved frying fresh chillies and garlic in olive oil. But after reading Marco Cannoras fab little bone broth bible, 'Brodo' I've found an even easier method that's just as delicious.
I was so exctied the first time I made this healthy take on 'pizza'. Even my Irishman, a devotee of the classic Napoli pizza style said it was delicious.
