Indian Spiced Salmon with Minty Yoghurt
It’s asparagus season here! And while my baby asparagus patch has some shoots showing, I’m waiting until next year to start harvesting.

This is one of those fab little one pot meals that is equally welcome on an ordinary Wednesday night as it is for Sunday bunch.
I’m super excited about these burgers. At last a vegetarian burger that celebrates one of my favourite veggies. The yoghurt sauce is super simple and a great thing to have up your sleeve. It’s amazing what a little salt and pepper can do to a good quality natural yoghurt.
Just so you know, I don’t use the term ‘best ever’ lightly. But in this case I really feel it’s well deserved. The first time I made this I thought we were going to have loads of leftovers for breakfast / lunch but my Irishman loved it so much he polished off the whole bowl in one sitting… An accolade usually reserved for dishes involving potatoes… The highest praise!
Love being super efficient in the kitchen? Me too.
If you love Cabbage and you love Sausages… then this Cabbage and Sausage magic meal is going to become your new best friend.
While traditional shepherds pie can be a bit heavy on the carbs, this almost 'paleo' version using cauliflower mash instead of potatoes is much lighter.
I used to think cucumber was boring UNTIL I had a bumper crop this Summer. After coming up with creative ways to eat cucumber for weeks, I discovered that this humble veg is actually a textural powerhouse. All it needs is some umami and heat to bring it to life like in this Crispy Chilli Cucumber Bowl.
Growing up spaghetti bolognese was one of my all time favourite meals. I can't remember where I got the idea to give this old family favourite an Asian twist, but trust me, it's just as delicious!
While soft, silky aubergine is a thing of beauty, under-cooked aubergine is one of the worst thing you can put in your mouth. The first time I made this I was a little nervous about getting the aubergine cooked within 10 minutes, but to my surprise it was a cinch.
Balsamic vinegar is such as magical ingredient. Especially with these sausages and cabbage.
I think cabbage is one of the most underrated vegetables.
Move over spiralized zucchini! There's a new vegetable based pasta substitute that is even more delicious and comforting.
There's something really magical about dusting cooked food in a spice mix just before eating. Not only do you get the beautiful spiced flavours, it also coats the chicken to give a slightly crunchy crust. So good and so little effort!

Is this going to be the same as an oozy creamy risotto made with real Italian arborio rice? No.
On so many levels this dish has absolutely nothing to do with Paella – the classic Spanish dish of rice, stock and seafood cooked in a wide shallow paella pan.
I was so exctied the first time I made this healthy take on 'pizza'. Even my Irishman, a devotee of the classic Napoli pizza style said it was delicious.
Rice can be a hassle to cook without it going ‘gluggy’. Finely grated raw veg only take a fraction of the time and end up lovely and fluffy every time. Plus it’s a really easy way to get more veg into your diet.
Back when I used to eat potato chips on a regular basis, ‘cheese and onion’ was one of my favourite flavour combos. This recipe is a little healthier celebration of that classic junk food ‘marriage’.
Growing up the only time I ate cauliflower was when my mum smothered it in a creamy cheesy sauce. Really I was all about the sauce and left behind most of the cauli. If you had told me back then that cauliflower would one day be one of my favourite vegetables, I would never have believed you.
I love a good chilli con carne but sometimes a veggie chilli is what you need to hit the spot.
So the other day I had a hankering for a big bowl of lentil and sausage soup. But I didn’t really want all the lentil carbs and I had 1/2 a cauliflower which needed eating up.
If you’re not familiar with Colcannon, you are in for a treat!
